one thing i just noticed on your block--you just got a bike from recyclistas, that is a great way to go! supporting local small businesses and buying used it can't get much better
but i still would like to give you guys a few pointers about your gear:
panniers: only ortlieb--i know they are super expensive, but nothing worse then having wet clothing after a rainy day!
also make sure you have the proper wheels for heavy loads, otherwise you have to bring lots of extra spokes on your trip! go to fairfield and show them your bike--they are really good in there and know what they are talking about!
